Guest guest Posted February 20, 2001 Report Share Posted February 20, 2001 Vegan Garlic Mashed Potatoes With Tofu 5 lbs. red or white potatoes, peeled, and cut in cubes Water to cover 8 cloves garlic 3 T olive oil 1 package silken tofu 1/4 cup non-dairy " milk " Salt and pepper to taste. Boil potatoes until done. Drain and transfer to a bowl. While potatoes are cooking, sauté whole cloves of garlic in olive oil until soft. Crumble tofu into blender and blend until smooth. Add " milk " and garlic/oil mixture, then blend until smooth. Pour mixture over potatoes and mix until smooth. You may wish to mix with a hand mixer. Add salt and pepper.
