Guest guest Posted February 19, 2001 Report Share Posted February 19, 2001 Vegetarian Low-Fat Spanish Rice 2 tsp. vegetable oil 1 cup chopped onion 1 cup chopped green bell pepper 2 garlic cloves, minced 1 2/2 cups uncooked instant rice 2 (14 1/2 oz.) cans diced tomatoes, undrained 1 (5 1/2-oz.) can tomato juice 2 tsp. chili powder 1 tsp. ground cumin 1/2 tsp. hot sauce 1/4 tsp. chopped fresh cilantro Place a large saucepan over med.-high heat until hot; add oil. Add onion, bell peeper and garlic; cook, stirring constantly, until tender. Stir in rice and next 5 ingredients. Bring to a boil; cover, reduce heat, and simmer 7 min. or until liquid is absorbed.
