Pasta with Chili Sauce

From the Ultimate Vegetarian Cookbook

Serves 4

 

Pasta

2/3 cup olive oil

2 garlic cloves, crushed

1/2 t. red chili oil

2 zucchini, sliced

1 red pepper, halved, seeded and quartered

2 sm. eggplants, sliced

1 red onion, cut into thin rings

6 oyster mushrooms

Mix together oil, garlic, chili oil, and salt in lg. bowl. Toss veggies in mixture to coat. Remove veggies from oil and reserve oil. Broil veggies on high setting for 5 min on each side, until golden and tender. Return veggies to oil.

 

Cook pasta in pot of boiling salted water until done, al dente. Drain pasta, toss with veggies and oil, and season.
