Guest guest Posted February 14, 2001 Report Share Posted February 14, 2001 Serves 3 From 30-Minute Vegetarian Recipes 6 oz. dried spaghetti 3 sm. zucchini 2 cl. garlic 1-2 dried red chili peppers 3 T olive oil salt and pepper parmesan cheese Bring large saucepan of water to boil over high heat. Add spaghetti and cook 10-12 min. or until tender. Drain. Meanwhile, cut zucchini into quarters lengthwise, then slice thinly. Slice garlic and chop chili peppers. Heat oil in skillet over med. heat. Add garlic and fry 1 min, stirring, until lightly browned. Remove garlic from pan and set aside. Add zucchini and chili peppers to pan and fry 3-5 min, stirring occasionally, until light brown but still crisp. Add salt and pepper, return garlic to pan. Transfer drained spaghetti to dish.
