Guest guest Posted February 14, 2001 Report Share Posted February 14, 2001 Serves 2 From the 30-Minute Vegetarian Recipe Cookbook 1/2 red bell pepper 1/2 yellow bell pepper 1 sm. red onion 5 oz mozzarella 3 T olive oil 1 T chopped fresh oregano 2 lg. sl. French bread 1 cl. garlic, halved salt and pepper Preheat broiler to high. To prepare veggies, core and seed pepper halves. Cut onion in half. Under broiler, broil peppers and onion on both sides until black. Place peppers in plastic bag 2 min. for skins to soften, then skin and cut into strips. Slice onion. Coarsely grate cheese. Put bell pepper and onion slices in bowl with half the olive oil, the oregano, cheese, and seasoning. Toast bread under broiler, then rub one side of each slice with garlic clove.
