Guest guest Posted February 14, 2001 Report Share Posted February 14, 2001 Serves 3 30-Minute Vegetarian Recipes 1 lg. red bell pepper 1/3 C. frozen peas 6 oz. fusilli or macaroni 1 T olive oil 2 oz. soft cheese with herbs and garlic 2 T sour cream Salt and pepper 2 T shredded fresh basil parmesan cheese Preheat broiler to high. Place whole pepper on broiler pan and broil 5 min. turning occas. until skin is black. Place pepper in plastic bag for 2 min. to loosen skin. Meanwhile, cook peas in saucepan of boiling water for 2 min until just tender. Drain, rinse, drain. Halve, core, seed pepper, peel off skin. Cut flesh into 1" strips. Bring lg. saucepan of water to boil over high heat. Add pasta and cook 10-12 min until tender. Drain. While pasta is cooking, heat olive oil in skillet over med. heat. Add pepper strips and cook 1 min, stirring occas. then stir in soft cheese and sour cream and continue stirring to make smooth, creamy sauce. Add peas, salt, pepper, turn up heat and bring to boil.
