Guest guest Posted February 8, 2001 Report Share Posted February 8, 2001 BAKED TOFU NUGGETS 1 pound extra firm tofu Marinade: 3 Tbs. cornmeal 1 1/2 cups water 3 Tbs. flour (barley, oat, or wheat) 1/3 cup tamari or soy sauce 1/2 tsp. oregano 2 Tbs. fresh grated ginger root 1/2 tsp. basil 2 cloves garlic, crushed salt/pepper to taste 1 Tbs. sesame oil Combine all the ingredients for the marinade, mix well. Drain the tofu and remove the excess water. Cut the tofu into 1- inch cubes. Place tofu and marinade into shallow pan and allow to soak for at least 1 hour or up to 12 hours. Turn the tofu occasionally to allow all sides to marinade well. Preheat oven to 400 degrees F. In a small bowl, combine the cornmeal, flour, oregano, basil, and salt/pepper. Lightly oil a baking sheet. Remove the tofu from the marinade a few cubes at a time and place into the flour mixture. Coat evenly. Place coated tofu cubes onto baking sheet in a single layer. Continue coating remaining cubes. Place in oven and allow to bake for 15-20 minutes, turning several times to allow all sides to brown evenly. These are great warm or cold.
