Guest guest Posted February 8, 2001 Report Share Posted February 8, 2001 MOCHA BREAD PUDDING 2 eggs 2 Tbsp sugar 2 1/4 cups milk 1 tsp instant coffee 2 tsp cocoa powder 2 slices bread, NOT buttered, sliced into thirds 5 drops rum essence (optional) Cut the bread into thirds, and layer these fingers in a casserole dish. Beat the eggs and sugar together. Add the milk, cocoa, coffee, and rum essence and mix well. Pour this mixture through a strainer over the bread. Bake at 180 degrees C (350 degrees F) for 30 minutes, until the custard sets. Allow to stand 5 minutes before serving. This is nice hot or cold. (I used low-fat Lactaid milk to make this, and have made similar recipes with soy milk. I'm sure you could substitute egg replacer for the eggs, but I haven't tried this myself.
