Guest guest Posted February 7, 2001 Report Share Posted February 7, 2001 Vegan Mustard & Herb Potatoes 3 pounds small red potatoes, scrubbed and quartered (approximately 4 cups) 1 cup onion, chopped finely 12 cloves garlic, chopped coarsely 1/2 cup spicy brown mustard 2 tablespoons olive oil 2 teaspoons dried rosemary leaves Preparation is a snap. Combine all the ingredients, making sure the mustard and oil are spread evenly, and bake for one hour or until the potatoes are tender. Stir before serving.
