'96 Serving Size : 2 Preparation Time :0:00 Categories : Italian Pasta Soups & Stews Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons chopped almonds 1 small zucchini -- in 1 " cubes 1 cup vegetable broth 8 ounces Crushed Tomatoes, Canned -- undrained 4 ounces cooked Great Northern beans -- rinsed well 2 tablespoons chopped fresh basil -- or equivalent dried 1/2 dash salt 1/2 dash pepper 4 ounces tortellini, spinach-filled -- Uncooked fresh parsley -- to garnish grated parmesan cheese -- to garnish Combine all ingredients in medium-size sauce pan. Mix well. Cover and cook over lowest setting for 30 minutes. Add water if needed. The tortellini should soft and hot. Garnish with an herb. Serve with parmesan. Per serving: 345 Calories (kcal); 11g Total Fat; (28% calories from fat); 17g Protein; 46g Carbohydrate; 75mg Cholesterol; 1170mg Sodium; Fiber 9 g.
