Guest guest Posted February 5, 2001 Report Share Posted February 5, 2001 Vegetarian 3 Bean Tortilla Soup 1 large tomato 1 small onion, finely chopped 2 large garlic cloves, minced 1 (15 oz) can black beans, drained, rinsed 1 (15 oz) can navy or white beans, drained, rinsed 1 (15 oz) can chili beans (zesty sauce), undrained 1 (14-1/2 oz) can vegetable broth 2 oz (1/2 cup) finely shredded cheddar cheese Bag of tortilla chips (or you can make your own if you'd like) Spray large saucepan with nonstick cooking spray. Add tomatoes, onion, and garlic and cook over medium for about 3 minutes, stirring occasionally. Add black beans (drained), then add navy or white beans (drained), chili beans (undrained), and the broth; mix well. Bring to boil, then reduce heat and simmer 15 to 20 minutes or until veggies are tender. To serve, place tortilla strips in bottom of soup bowls, then ladle soup into bowls.
