Guest guest
hi everyone, I've been lurking for a while. tried some of the past recipes....yum, thanks to those who have shared. just thought I would share an old favourite. corn fritters 3 fresh corn on the cob 1 egg 1/2 cup coconut cream { or there abouts } 3/4 cup flour - or just enough to " hold " the mixture together tsp green curry paste - use the vegetarian type, has no shrimp paste in it Soya oil for frying sweet chilli sauce for dipping mix together the corn, egg, coconut cream & the green curry paste. then add the flour. should be a little runny. in a heavy non-stick pan, heat the oil over a moderate heat, adding table spoons full of the mixture. when outside browns a little, turn over. drain on paper towels serve with sweet chilli sauce as a dip. love light & a smile Serene Gaze
