Guest guest Posted January 20, 2001 Report Share Posted January 20, 2001 Vegan Vegetable Pasta 1 medium onion, chopped fine 1 medium bell pepper, chopped 1 T Olive oil 1/4 tsp. garlic powder 1 tsp. ground black pepper 1 medium zucchini, chopped 1/2 cup frozen leaf spinach, chopped 1/2 cup purple cabbage, chopped fine 2 tsp. dried oregano 1 tsp. dried sweet basil 1 tsp. salt 1 T Olive oil 1 cup chopped mushrooms 28-29 oz. canned, diced tomatoes 8 oz. can tomato sauce Saute oinion, bell pepper, garlic, black pepper in 1 T olive oil until onions are limp. Add zucchini, cabbage, spinach. Saute 3 or 4 minutes longer. Add mushrooms, basil, oregano, salt, and 1 T olive oil. Saute 3 minutes longer.
