Guest guest Posted January 20, 2001 Report Share Posted January 20, 2001 VEGETARIAN GARLIC POTATOES 3 cups potatoes, unpeeled and cut into one-inch cubes 3 tablespoons butter 2 cloves garlic, chopped 1/2 cup finely chopped onion 1 teaspoon paprika Boil potatoes for 8 minutes or until tender. Meanwhile, in a saucepan, saute the onions and garlic in the butter for 6 minutes or until the onions start to brown. Stir in the cooked potatoes and let simmer for 12 minutes, stirring occasionally. Serve hot. Over medium-high heat, bring a large pot of water to boiling. Add potatoes and return to boiling. Cook 6-8 minutes or until potatoes are tender. Drain. In a medium skillet over medium heat, melt 1 tablespoon of butter; add garlic and saute 1-2 minutes or until garlic begins to brown. Add onion and continue to cook, stirring, for 4 more minutes or until onion begins to brown. Add remaining butter and cook to melt. Stir in potatoes and paprika, and mix well.
