Guest guest Posted January 20, 2001 Report Share Posted January 20, 2001 VEGETARIAN LENTILS AND RICE 1 cup dry lentils 4 cups water In a medium saucepan, simmer the lentils for 20 minutes. 1 tablespoon vegetable oil 1/2 onion diced 1 tablespoon cumin 1 teaspoon cinnamon 1/2 cup rice (I prefer long-grain brown rice) 1/2 teaspoon salt Heat the oil in a large saucepan. Saute the onion until it is translucent (about 5 minutes). Add the cumin and the cinnamon. Add the rice, then pour the lentils into the rice mix along with the water. Add the salt. Cook according to the rice directions (brown rice, 40 minutes; white rice 20 minutes). Do not cover the mixture. 1/2 onion, sliced into rings 1 teaspoon oil While the mixture of lentils and rice is simmering, in a skillet, heat the oil. Saute the onion for about 5 minutes.
