Vegetarian Spicy Quick Bread

 

2 1/2 cups whole wheat pastry flour

1/2 cup brown sugar

1 1/2 teaspoons baking soda, sifted

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon ground cardamom

1/4 teaspoon salt

1/2 teaspoon ground cloves

1/2 cup soy milk

1/2 cup prune puree

2 tablespoons canola oil, optional

1 cup soy yogurt

 

Preheat oven to 350. Prepare 9x5x3 " loaf pan with spray.

Stir together dry ingredients in large bowl. Combine wet ingredients in

separate bowl. Add wet to dry ingredients and stir until just mixed.

Spoon batter into loaf pan and bake for about 1 hour.
