Guest guest Posted January 19, 2001 Report Share Posted January 19, 2001 Vegetarian Low-Fat Spinach Salad with Fruit and Honey 4 cups torn spinach 1 medium apple or pear -- cored, coarsely chopped 1/4 cup seedless red grapes -- halved 1/4 cup sliced celery 1/4 cup nonfat plain yogurt 1 tablespoon honey 1/4 teaspoon grated lime peel In a salad bowl, combine the spinach, apples or pears, grapes and celery set aside. In a small bowl, stir together the yogurt, honey and lime peel. Drizzle over the spinach mixture. Gently toss until lightly coated. Makes 4 servings.
