Guest guest Posted December 22, 2000 Report Share Posted December 22, 2000 1 lb. seitan 3 sweet apples, peeled, cored, slivered Canola oil for deep frying 2 tbspn umeboshi vinegar 1 tbspn extra virgin olive oil 2 tbspn balsalmic vinegar 6 cps finely shredded red cabbage 1 tbspn caraway seeds 3 cps chopped onion Parsley for garnish Squeeze seitan gently to remove excess liquid & cut into 1 1/2 inch pieces Deep fry in 2 inches of hot canola oil just until outsides are crisp. Drain on paper towel. Preheat oven to 350 degrees. In large skillet over med. heat, heat olive oil, and saute the cabbage and onion until cabbage is wilted and onion is transparent, about 5-10 minutes. Add the apples and saute 1 minute longer. Then add the vinegars and caraway seeds. Place cabbage mixture in a large ovenproof dish, cover, and bake. After about 20 minutes, bury the seitan pieces in the mixture, then bake 20 minutes longer.
