Question from this veggie non-cook: Are canned beans about as nutritious as

dried beans which come in bulk?

I know that canned veggies lose a lot of nutrients, so I always try to go

for the fresh or frozen, but beans are a mystery to me. So much easier for

me to open a can, than to rinse, soak, etc. Anyone know about nutritional

loss in canning? BMacCameron

Just like other vegetables, beans are not as good for you when they're canned as when they're dried or fresh. I don't have any exact numbers on the differences, but there is nutrient loss. The main reason I prefer dried to canned, however, isn't for nutrition reasons. For me, it's all about the texture and flavour. Canned beans are much softer, sometimes to the point of being mushy, while dried beans are firm and really stand out when it comes to having a much better flavour. Sure, I'll keep a couple cans of black beans around the house for when I'm running from one place to another and only have time for a quick meal. But when it comes to a good meal that needs beans, such as my four bean enchiladas, there's no comparison with dried. I heard on the news a couple of weeks ago that canned is actually better

than fresh.....

But I still prefer to have fresh, it tastes better.
