I love all the great recipes that I'm finding here, although I have to admit that at times it is tough to get children to try foods that they aren't exactly familiar with. If anyone else is or has been in this position, here's a couple of our family favorites... I keep several packages of frozen firm tofu in the freezer. It works as a great replacement for recipes that call for ground meat of any kind. Defrost in microwave, Squeeze all the excess water out of the block of tofu. Crumble into small pieces. Add one jar of spaghetti sauce (there are some great organic pre made sauces). Sometimes I add some pickled garlic or some grated carrot .... Serve over pasta. My kids also love potato stuffers Use your defrosted tofu, again, squeeze out all the excess water. Sauté with a tiny bit of olive oil and a package of good quality taco seasonings. Serve with grated cheese, tomatoes, lettuce and sour cream. Instead of using tortillas, we serve these on a baked potato. I know that these aren't gourmet, but they are fast and pretty kid friendly.
