Guest guest Posted December 3, 2000 Report Share Posted December 3, 2000 Vegetarian Low-Fat White Bean Salsa 1 c. white pea beans, soaked and cooked or canned in water: drained and rinsed 1/2 red onion, finely chopped 4 cloves garlic, minced 1/2 small red pepper, finely chopped 1/2 small green pepper, finely chopped 1 small jalapeno pepper, finely chopped 2 plum tomatoes, seeded and diced 2 tbsps. fresh parsley, chopped 2 tbsps. fresh coriander, chopped 3 tbsps. olive oil Juice of half a lime Salt and pepper to taste In a glass or plastic mixing bowl, combine all ingredients and season to taste. Refrigerate for at least 1 hour before use. Serve at room temperature. Makes 2 cups - 8 servings Calories...99...Fat...6 g...Carbs...9 g...Protein...3 g...Fiber...1.7 g.
