" Dinner on the table fifteen minutes after I take off my hat is " quick. " I would like to see more quick food on this list. I am collecting two-ingredient main dishes that serve two (not including seasonings). Here are two. Either can be made in the microwave. Does anyone else have any? Spaghetti in Five Minutes 1 pint stewed tomatoes (preferably home-made) 1 package ramen noodles (discard seasoning packet), broken up a little (Seasonings: oregano, basil, pepper, thyme? Depends on the tomatoes.) Place tomatoes in saucepan, stir in noodles, bring to simmer on medium heat while preparing side dishes, season, garnish and serve. (Add a little wine if it starts to stick.) Side dishes: garlic bread, tossed green salad. We can bushels of overripe tomatoes (rejects from a farmers' market in the summer). If you buy 14.5 ounce cans of stewed tomatoes at Costco, the cost of each serving is 90 cents (77-cent tomatoes, 13-cent noodles at 8 packets for a dollar). Potatoes Pronto 1 large can baby potatoes, rinsed, with a little water for steaming 1 package seasoned feta cheese (or vegan equivalent) (Seasonings: cracked black pepper?... depends on which feta you bought) Steam potatoes until hot, covered, on high or medium heat while preparing side dishes; drain, toss with feta in serving dish, garnish and serve. Side dishes: greens, plate of mixed pickles. This came from a very busy friend who lives on a sailboat. Feta Schetta 1 package or about 1 cup herb and garlic feta cheese (or plain if you want, herbed is more fun if you can find it!) about 3 medium fresh diced tomatoes french bread/baugette, sliced olive oil 3 cloves minced garlic 1) Mix the garlic and oil, let sit while you dice the tomatoes and slice the bread, or longer if you have the time. 2) drizzle and spread oil mix over bread slices 3) cover bread with tomatoes and feta 4) bake at 350F(ish) for 8-12 minutes, until everything is toasty and brown (keep an eye on it, it will burn fast!) again, all ingredient amounts are entirely subjective! serve with salad, or as an appetizer, or alone.
