Guest guest Posted December 3, 2000 Report Share Posted December 3, 2000 From two different recipe books, we have found together they make a cozy small winter meal: Carrot Potage 1 lb. carrots 1 medium size potato 1 medium size onion 1 oz. margarine 1 tsp. thyme and sage 2 pints vegetable stock 1 tsp yeast extract salt and pepper to tast Chop the vegetables. Melt the butter, add the onion, and sauté until transparent. Add the remaining ingrediants, bring to a boil, reduce heat and simmer, covered, for 1/2 hour. Allow to cool slightly, then blend in blender in small quantities until smooth. Adjust seasoning to taste. Ploughman's Sandwich Fresh, crusy bread butter or margarine 2-4 oz. good-quality aged Stilton cheese crisp lettuce leaves 1 firm tomato, sliced pickled onions or other pickles (cornichons are good, miniature onions in balsamic vinegar are really good) Warm the bread, cut it into thick slices and arrange on a platter with the remaining ingrediants so people can make their own sandwiches. Good served with a glass of beer or apple cider. Alternate: instead of a Ploughman's Sandwich, vegans could make a grilled soy-cheese sandwich with tomatos. That is just as tasty with the soup.
