milk substitutes in recipes

I have never been a big milk drinker, but my husband has and since I have been trying to go as vegan as possible, he was willing to give a few non-milk products a try. Turns out we both really like Silk brand soy milk. I use it in condensed soups, like chowders and it seems to work well. I asked my hubbie if it curdles when he puts it in his coffee and he said yes, but that it didn't bother him. I'm wondering though, is it unsafe to drink any kind of curdled milk, real or not? If I use soy milk in heated recipes, that is not unhealthy, right?
