Guest guest Posted November 26, 2000 Report Share Posted November 26, 2000 Vegetarian, New Orleans Red Beans 1 pound dry red beans 2 quarts of water 1-1/2 cup chopped onion 1 cup chopped celery 1 cup chopped green pepper 3 tablespoon garlic, chopped 3 tablespoon parsley, chopped 2 teaspoons dried thyme 1 teaspoon salt 1 teaspoon black pepper Rinse the beans and combine with the water, onion, and celery in a large pot. Bring to a boil and reduce to low heat. Cover and let it cook for about 1-1/2 hour. Once the beans have been cooked and are tender, mash the beans against the side of the pot.
