Vegetarian, New Orleans Red Beans

 

1 pound dry red beans

2 quarts of water

1-1/2 cup chopped onion

1 cup chopped celery

1 cup chopped green pepper

3 tablespoon garlic, chopped

3 tablespoon parsley, chopped

2 teaspoons dried thyme

1 teaspoon salt

1 teaspoon black pepper

 

Rinse the beans and combine with the water, onion, and celery in a

large pot. Bring to a boil and reduce to low heat. Cover and let it

cook for about 1-1/2 hour. Once the beans have been cooked and are

tender, mash the beans against the side of the pot.

Add the remaining ingredients and cook over low heat for 30 minutes or

until it reaches a creamy consistency. Serve over rice.
