Guest guest Posted November 24, 2000 Report Share Posted November 24, 2000 Vegetarian, Diabetic, Low-Fat Mushroom Caviar (no exchanges) 1 tablespoon olive oil 4 scallions, minced 1/2 pound portobello mushroom, cut in 1 1/2 " cubes 6 cloves garlic, roughly chopped 1/2 teaspoon fresh thyme, chopped 2 teaspoons lemon juice 4 teaspoons balsamic vinegar 1/4 teaspoon freshly ground black pepper In large saucepan heat 1 tsp. olive oil and saute scallion until tender. Set aside. Heat remaining oil and saute mushrooms, garlic and thyme until tender. Do not overcrowd pan, or mushrooms will poach. Transfer mushrooms and scallions to a food processor. Using pulse button process until coarsely chopped. Return to saucepan. Add remaining ingredients and saute over medium high heat until liquid has evaporated.
