Guest guest Posted November 24, 2000 Report Share Posted November 24, 2000 Vegetarian Onion Soup 7 cups vegetable broth 1/4 cup plum vinegar 2 cloves garlic 1 tablespoon olive oil 1 ounce fried shiitake mushrooms or 4 ounces fresh 1 large red onion, thinly sliced 1 tablespoon miso Whole-wheat croutons Soy Parmesan Bring first four ingredients to a boil in a saucepan. Meanwhile, rinse dried mushrooms very well to remove grit. Add mushrooms to pan, reduce heat, cover, and simmer 15-20 minutes or until garlic and mushrooms are very soft. Process garlic and mushrooms and a cup or two of broth in a blender until very smooth. Return to pot. Add onion and simmer until onion is tender. Stir miso with a little water in a cup.
