Guest guest Posted November 22, 2000 Report Share Posted November 22, 2000 Vegetarian Apple, Mango & Radish Salad From; The Complete Encyclopedia of Vegetables and Vegetarian Cooking. 1 Winesap or Fuji apple, peeled, cored, and thinly sliced 15 radishes 2 celery stalks, thinly sliced 1 small ripe mango, peeled and cut into chunks 1/2 cup tofu sour cream 2 teaspoons creamed horseradish 1 tablespoon chopped, fresh dill Salt and freshly ground black pepper to taste More dill garnish Remove the ends of the radishes and slice them thinly. Add to a bowl together with the sliced apple and celery. Add the mangos to the bowl. Whisk together remaining ingredients in another small bowl. Pour the dressing over the vegetables and fruit, and stir gently until all ingredients are coated in the dressing. Check for taste. Adjust seasoning if necessary. Garnish with dill sprigs. Serves 4.
