Guest guest Posted November 22, 2000 Report Share Posted November 22, 2000 Vegetarian Spinach Soup 2 10-ounce packages of chopped frozen spinach 6 cups of vegetable broth 1/2 cup brown rice 3 cloves of garlic, crushed Pinch of grated nutmeg 1 tablespoon of lemon juice Salt and pepper to taste 1/4 cup grated cheese Combine the spinach, vegetable broth, and garlic in a large pot and bring to a boil. Add the rice, nutmeg, and lemon juice. Let it simmer until the rice is cooked and the desired thickness is reached. Serve with cheese sprinkled on top.
