Guest guest Posted November 20, 2000 Report Share Posted November 20, 2000 Vegetarian Seitan Stew If you don't have any seitan on hand, you can substitute 2 cups of firm tofu. 2 cups seitan, diced 1 cup of carrots, chopped 1/2 cup parsnips, chopped 1 cup onion, diced 1 cup potatoes, diced 1/2 teaspoon rosemary 3 cloves of garlic, chopped 1/2 teaspoon of basil 2 cups water 3 teaspoons soy sauce 2 tablespoons of cornstarch 1/2 cup celery, chopped Combine the seitan, carrots, parsnips, onion, potatoes, celery, rosemary, garlic, and basil with 1/4 cup of water in a large pot. Cook the ingredients over medium heat for about 10 minutes. Add the remaining water, soy sauce, and cornstarch. Cook for 10 to 15 minutes.
