Guest guest Posted November 19, 2000 Report Share Posted November 19, 2000 Vegetarian Peas & Rice 2/3 cup black beans (really any kind of pea or bean will do) 2 cups rice (uncooked) 1 pint coconut milk 1/2 cup chopped onions Salt and pepper to taste Using a large pot, combine the beans with 1 quart of water. Boil until the beans are cooked. Next, add the coconut milk, salt, and pepper. Cook over high heat for 3 to 5 minutes. Then add the rice and cook until the rice is done and the water has evaporated. This is a dry dish that has a pasty consistency. My friend, on different occasions, has added the following ingredients: okra, spinach, kale, celery, tomatoes, carrots . . . you get the idea--anything goes.
