Hi all. Hummus is one of my favorites. When I make it, I generally

add most of the ingredients a little at a time and taste it every time I

add something. I use a food processor, but if you don't have one you can

mash it as best you can with a fork. It will be lumpy this way, not creamy.

Anyway here goes:

1 can chick peas (large can or two small)

(or 2-3 C re-hydrated if you are using

dry)

2-3 large cloves garlic

2 Tbsp Tahini (can substitute peanut

butter, but it's not as good)

1/4 to 1/2 C lemon juice

salt & pepper to taste

any herbs you like,to taste (I personally

like my hummus very basic, with no herbs)

Chop chick peas in food processor. Add garlic and chop/mix

again- 2 cloves is usually enough, but I love garlic & often use

3!). Next, add Tahini, 1/4 C lemon juice and salt, pepper,

herbs. Process until creamy. Taste this mix and add more lemon

juice/salt/pepper if needed. If you have enough lemon flavor,

but it's still not creamy enough, you can add a small amount

of water and blend again. Enjoy!
