Guest guest Posted November 15, 2000 Report Share Posted November 15, 2000 Vegetarian, Bean & Corn Salad 1 cup of corn, cooked 2/3 cup black beans, cooked 1 onion, chopped 1 red bell pepper 1 green bell pepper 4 cloves of garlic, minced 2 tablespoons of cilantro 1 tablespoon of olive oil 1 tablespoon of water 2 lemons If you can, grill the bell peppers in a barbecue pit. If one is not available, you can roast them over a stove burner. Then chop lengthwise. Next, in a skillet, heat the oil and saute the garlic and onion. Combine the contents of the skillet and the green peppers with the remaining ingredients in a salad bowl. Toss and let chill for at least 20 minutes before serving.
