Guest guest Posted November 15, 2000 Report Share Posted November 15, 2000 Try crumbled tofu with nutritional yeast (generous amounts!) and any egg/omelette seasonings. that was my transition, although I'm now back to eggs. The tofu is quite good. Use firm (has 10 percent calcium, v. 4-6 % ca in extra firm) tofu, squish out the water you can or drain the tofu, and saute in margarine until moisture is gone. Egg sandwiches, omelets, scrambled eggs, etc. are some of my favorite quick foods. Is there such a thing as 'eggless eggs'? Any suggestions for workarounds? Thanks!
