Guest guest Posted November 13, 2000 Report Share Posted November 13, 2000 Vegetarian, Brown Rice Burgers 1 large onion, finely chopped 3 cloves garlic, minced 1 cup water chestnuts, finely chopped 1/2 cup green pepper, diced 1/4 cup parsley, minced 4 cups cooked brown rice 2 cups carrots, shredded 2 large eggs (or use egg whites), beaten 1 cup whole wheat flour Salt and pepper to taste 3 tablespoons vegetable oil Saute onion, garlic, water chestnuts, and green pepper in oil for 10 minutes. Mix with parsley, rice, carrots, eggs, and flour. Add salt and pepper to taste. Drop mixture in 1/4-cup quantities onto oiled hot griddle or skillet. Brown on both sides.
