Guest guest Posted November 13, 2000 Report Share Posted November 13, 2000 Vegetarian, Chickpea Stew 1 cup chickpeas (drained) 2/3 cup of chopped onions 1 cup of carrots, chopped 1/2 cup of corn 1 cup green peas 4 tablespoons of tomato puree 2 tablespoons of olive oil 1 teaspoon cumin 2 teaspoons coriander 24 ounces of water Salt and pepper to taste Saute the onions and carrots for 6 minutes. Then add the cumin, coriander, salt, and pepper. Add the remaining ingredients and bring to a boil. Reduce the heat and let simmer for 30 minutes or until the desired consistency is achieved.
