Guest guest Posted November 13, 2000 Report Share Posted November 13, 2000 Vegetarian; Low-Fat Carrot Slaw 2 cups shredded carrots 1/2 cup chopped green pepper 1/4 cup chopped onion 1 small, sweet apple (red or gold delicious), unpeeled, shredded 1/4 cup plus 2 tablespoons raisins 2 tablespoons vegetable oil 2-1/2 tablespoons vinegar 4 teaspoons sugar 1/4 teaspoon celery seed 1/4 teaspoon salt 1/4 teaspoon dry mustard In a medium bowl, combine carrots, green pepper, onion, apple, and raisins. In a small saucepan, combine remaining ingredients. Bring to a boil over medium-high heat. Pour over salad; toss thoroughly. Chill 2 to 3 hours before serving. Makes 4 servings.
