This isn't super quick, but if you cook the noodles first, then it cuts the time down considerably. What I do is put it all together the night before I need it. I chop the veggies while cooking the noodles, and then just slap it all in the dish, cover it and stick it in the fridge. Then, it is ready to be baked when you get home from work or the store or wherever the next evening. I make it with alfredo sauce because I'm not a big fan of tomato sauce. Enjoy!!!

Rena’s Delightful Vegetable Alfredo Lasagne

 

 

 

This is very fattening, but very good!!! (But, it’s rich, so you can’t eat very much at one time!)

 

1 small yellow squash, sliced thinly

1 small zucchini squash, sliced thinly

3 or 4 Roma tomatoes, sliced thinly

1/2 Bag of frozen spinach, partially thawed

1/2 small can of sliced black olives

1 small yellow or white onion, sliced thinly

1 pkg of crumbled feta cheese

1 bag of shredded mozzerella cheese

1 jar of Alfredo sauce ( I use either Classico or Five Brothers)

8 lasagne noodles, partially cooked

 

Preheat oven to 375 degrees

Coat an 8x8 glass baking dish with vegetable spray.

Spoon about 2 tablespoons of Alfedo sauce into the bottom of the dish. Place noodles in the bottom of the dish on top of the sauce. Cut the noodles if needed. (That’s what I do). Spoon just enough Alfredo sauce over the noodles to just coat them. Add first layer of veggies, then another layer of noodles. You need to do this for each layer. You can do the layers in any order you wish.

 

Layer 1:

Yellow squash, zuchinni, mozzerella

 

Layer 2:

Spinach and feta cheese

 

Layer 3:

Roma tomatoes and mozzerella

 

Top: (Do not put noodle layer over this one)

Olives and onions

 

Cook in a 375 degree oven for about 35 minutes or until hot. Since the noodles are already partially cooked, it shouldn’t take any longer than that. You are basically just heating the veggies up and cooking them until just tender.

 

Slice, and serve hot. I would suggest serving with Italian bread and a red wine. Bien!
