Guest guest Posted November 5, 2000 Report Share Posted November 5, 2000 Vegetarian Lentil-Nut Loaf 1 c. lentils, washed 2 cs. water 1 large onion, chopped 1 cs. mushrooms, chopped 2 tbsps. oil 1 c. nuts, ground 1 c. breadcrumbs 1 tbsp. lemon juice 1 tbsp. soy sauce salt & pepper 1 tbsp. mixed herbs Cook lentils in water till soft (1/2 hour). Saute onions & mushrooms in oil till soft. Mix with remaining ingredients. Place in a greased baking pan & bake at 350F for 30 minutes. Garnish with parsley. Makes 4 servings.
