Guest guest Posted November 3, 2000 Report Share Posted November 3, 2000 I'm the non-meat eater in my family. The rest of them eat meat. My kids are 5 and 4. My husband is a mid-westerner-- "beef and corn fed". He's adapted well to a reduced meat lifestyle. My 5 year old is milk sensitive. I buy juices w/ calcium added, usually kids each have 5 oz day of juice. They eat 2 servings of "real fruit" each day -- w/ lunch and dinner, juice at breakfast, and eat 2 veggies at dinner time most of time. Everyone is healthy. This is my basic meal prep-- I make a varied assortment of dishes for dinner -- dish of cut up fruit, mashed potatoes or corn, brown rice sometimes, hot green veg-- like green beans amandine, asparagus w/ hollandaise or browned butter, steamed spinach, etc. For myself, I might poach an egg to go w/ this, or just eat whatever is prepped that night. For the rest of the fam, when I go to grocery, at the deli counter I'll purchase about 5-6 oz. of roast beef, sliced thicker. I'll get a jar of beef gravy, heat it up, put the meat into it to warm it, and the've got their meat, and I didn't have to cook it. I do same with turkey, or sometimes saute boneless/skinless chick breasts, and add jar gravy. This has worked well for me. They get their meat, but it's not the focal point of the meal. We all like rissotto (I make it in pressure cooker). I make it vegetarian, and give them a little meat (like shrimp) on top of it. Green salad and DINNER! One of my favorite meals for me is: steam asparagus. In a skillet, brown 1-2 T butter (cook slowly until browned). Remove, set aside. In same skillet, cook a couple eggs on med-low, with lid on to cook whites through. In a dish, place asparagus, drizzle w/ browned butter, sprinkle w/ a dash of fresh parmesan shreds, and put under toaster oven broiler. Top w/ eggs... yum!-- Yeah, I know it has too much cholesterol, but I have this maybe once every other month. Quote Link to comment Share on other sites More sharing options...
