Guest guest Posted October 31, 2000 Report Share Posted October 31, 2000 * Exported from MasterCook * Cajun Bean Patties Recipe By :Betty Crocker's Healthy New Choices Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cans dark red kidney beans -- (15 to 16 oz. each) drained and rinsed 1/4 cup fat-free, cholesterol-free egg product --OR 2 egg whites 1/4 cup plain dry bread crumbs 2 teaspoons Cajun or Creole seasoning 1/2 teaspoon salt 1 tablespoon vegetable oil --Tomato Salsa-- 2 large tomatoes -- chopped 2 tablespoons chopped fresh cilantro 2 tablespoons red wine vinegar 1/4 teaspoon salt Using a potato masher, a wooden spoon or your hands, mash beans, egg product, bread crumbs, Cajun seasoning and salt in a large bowl until most of the beans are crushed. Wet your hands and shape mixture into four 1/2-inch-thick patties. Heat oil in a nonstick skillet over medium-high heat. Cook patties in oil for 3 to 4 minutes on each side or until patties are heated through and slightly crusty. Top patties with salsa. Makes 4 servings. Salsa: Mix together tomatoes, cilantro, vinegar and salt. Cover and refrigerate 1 hour to blend flavors. From " Betty Crocker's Healthy New Choices, " (Macmillan, $25). The original recipe included a tomato sauce to serve over these. For a fresher summer flavor, we substituted a tomato salsa from elsewhere in the book. This flavorful burger was shared by a vegetarian friend. Habanero, or Scotch bonnet, peppers are orange, lantern-shaped peppers that are available in many supermarkets. They are known as the hottest chile pepper, so feel free to substitute a jalapeno to tame the heat if you like. For any pepper, use rubber gloves to handle them and don't touch your face.
