Tempeh Tacos Ingredients: package of tempeh tacos taco seasonings (packet or make up your own) salsa toppings - lettuce, onion, tomato Directions: Thaw tempeh if frozen, then grate with cheese grater. Heat frying pan with oil, and add tempeh. Cook on medium until brown, stirring occasionally. Add taco seasonings, we use Lawrys taco seasoning, (no animal products, msg etc). Add about 1 1/4 cups of water, and cook gently until thickened. Scoop into taco shells and add toppings. Tempeh most resembles what we used to fill tacos with in our less conscious days. It is also much easier to digest than TVP which people more commonly use. Find it at health food stores in the frozen section. Serves: 2-3 Preparation time: 20 minutes Nutrition Information: Tempeh is great for you and is an easily digestable source of soybeans. This is because it is made using a mold on soybeans so they are already partially digested by the mold.
