Now I want to make more, but I've lost the recipe, and I can't just remember the ingredients and procedure after all this time. I got a middle eastern cookbook and found the following recipe: Grind together with mortar and pestle 2 tablespoons cayenne pepper 1 tablespoon cumin 2 garlic cloves, minced ½ teaspoon salt Store in the refrigerator in a glass jar wtih a tight-fitting lid. To make harissa sauce, add 1 cup olive oil to the above mixture and cook, stirring constantly, 5 minutes. Serve with couscous dishes. Well, there's something, at least. But it's not the recipe I used before. That one required dried hot peppers. I suspect there are actually a number of ways to make harissa. Anybody here have a harissa recipe?
