I have made my own version for a while, but instead of firm tofu., I am in LOVE with Mori-Nu Lite Silken tofu (comes asaptically (sp) packaged in a box and will last for a year or two if you don't open it). I have used this product many many ways, and have fooled quite a lot of " I swear I will NEVER eat tofu " meat eaters. It is a wonderful substitute for ricotta cheese - just whir a package in a food processor or blender along with some herbs (fresh or dried) some vagan shredded cheese or parmesan and an egg if you wish. It stays firm throughout cooking and is wonderful in any italian dish. in fact, I never use ricotta cheese at all anymore, and with the Mori nu Lite, it's almost fat free . It also makes the incredible rich chocolate tofu pie which NO ONE can tell apart from a rich chocolate silk pie. kathleen Quote Link to comment Share on other sites More sharing options...
