Guest guest Posted October 22, 2000 Report Share Posted October 22, 2000 cilantro looks a lot like flat leaf parsley, but if you smell it you will know the difference immediately. it has a very strong, sweet, ummmm, green scent, if that makes any sense to you. it adds a great flavor to a lot of food but is usually found mostly in mexican and south western style cooking. they may have it in your regualar grocery store (depending on seasons and areas), and also at the natural foods market. fresh is much different than dried. when you find it, mince a bunch up and toss it with corn, black beans, red onion, peppers, and lime juice. salt and pepper to taste. i also like to do this with sweet potatoes. i cube them, saute them till browning, add a bit of water to scrape all the good stuff from the bottom of the skillet, then add the above veggies, cook for a bit, then add the lime and cilantro. this is a very colorful dish, and i like to serve it in a pool of black bean coulis (sauce) that i make by blending the beans and spices with some stock or tomato juice, salsa, whatever will thin them out a bit and allow you to blend till thin, and then run it through a chinois, food mill, or a fine mesh strainer. just take a spoon and push it through. pool it out on a dish, and place the sweet potato mix on top in the center. garnish with a dollop of vegan sour cream speckled with minced cilantro and a few sprigs on top. : ) laurie - " Steve Kendall " <skendal Sunday, October 22, 2000 10:36 AM Re: NEW MEMBER! > aphrodite wrote: > > > > hey steve, > > i like to do some of these: > > i add all sorts of things to black beans (my fave), like salsa and cilantro, > > or lime juice and cilantro, or a pureed chipolte pepper and you guessed > > it--cilantro. > > Thanks!
