A brief intro about me: I grew up in the Deep South (GA) which means that I had fewer options for diverse vegetarian eating when I first went meatless...I think I broke my poor old grandmother's heart when I told her I couldn't eat even her vegetables because they had hamhock in them! She didn't understand that meat seasoning was still meat! laff The first two years, I pretty much ate nothing but spaghetti and cereal! But, I just celebrated my 9th year at the beginning of this month, and I truly believe that my horizons have been VASTLY broadened by this lifestyle choice (as one veg-cookbook author says, meat eaters are constrained by the main dish and two sides whereas vegetarians can have a smorgasbord (spelling) of various dishes without being locked into traditional boring meals!). I cook for a meat- eater who does NOT feel the same about vegetarian cooking however - hopefully some of you will be able to expand my repertoire so that can be worked out.
