Guest guest Posted October 19, 2000 Report Share Posted October 19, 2000 CHARCOAL GRILLED SEITAN FAJITAS (very quick if using oven broiler!) -One package of your favorite beef or chicken-style Seitan (I recommend White Wave) Seitan gives a better texture/flavor to this dish than does any tofu I've tried and really draws the smoke flavor. -sliced onions, bell peppers, portabella mushrooms, corn, Italian squash,(whynot?) chopped garlic. -put these ingredients (and anything else that whets your appetite) into a tight-fitting marinating container along with the Seitan. -make a marinade using roughly the following ingredients: 1/4 - 1/3 cup lime or lemon juice, a dash of cumin, 1 tbsp chili powder, a shake of worcestershire sauce, salt and pepper to taste. -for perfect results, a grilling basket is ideal. This allows you to turn or shake the ingredients while over your charcoal fire. I let the ingredients cook until they begin to almost look " burnt. " If you don't have a charcoal grill or Weber kettle, simply put the ingredients into a shallow pan and broil them in the oven until they get that slightly " burnt " look. -A fantastic condiment? stir 1 tsp finely-chopped cilantro into a cup of plain yogurt and add a few drops of stevia (an excellent herbal sweetener) and blend well. Spoon hot mixture into those fresh tortillas, add some cilantro yogurt and your favorite hot sauce and savor! The hot ingredients with salsa contrast with the cool, slight sweetness of the cilantro/yogurt mixture to create a taste sensation. Your comments/questions always welcome.
