Guest guest Posted October 19, 2000 Report Share Posted October 19, 2000 ANYTHING vegetarian wraped up in a warm tortilla is permitted! Once you've tasted home-made corn tortillas, you're hooked. It's no- brainer simple. You can buy Masa flour (Masa Harina brand best) in most any market. Measure out the amount as specified on the sack, add water and mix to a clay-like consistency. Chill in fridge until cool(1 hour?) get a glass pie pan, saran-wrap (best) or wax-paper (ok) Work a gob of tortilla mixture in your hands to the size of a small egg. Press very flat between two sheets of either saran-wrap or wax- paper using the pie pan and carefully drop into a very hot ungreased skillet (cast iron best). Cook on one side until the surface bubbles, then take your biggest, flattest spatula and flip it over and cook the same time on the other side. These tortillas can be made well in advance and keep well for days in the fridge. Just take'em out and microwave them or lightly fry them in oil and wow, what a taste.
