So I have changed my way and am now cooking vegan. Following is a recipe I lovew for this season, its called pumpkin stew Hugs to all Kil 1 med Pumpkin 1 med Celery Root 1 med Rutabega 1 med Turnip root 1 med Butternut Squash 2 med Zuccinis 1 Large Sweet or Red Onion 1 qt Vegetable Broth (store bought or your own) 2 to 3 cloves garlic 2 to 3 celery stalks ground or whole leaf thyme 3 large tomatoes or 1 can stewed tomatoes 4 Tblspns Olive Oil 2 Tablespoons Flour or Arrowroot (for thickener) Cut hole in top of pumpkin - deseed and fill with boiling water place in pan and baked on 350 for 1 to 1 & 1/2 hours. Peal and cut into med chunks all root vegatbles and butternut squash Peal and chop garlic. Chop onion and celery stalks,m sautee in olive oil until tender, Add Turnip root, butternut squash, celery root, and rutabega cover with vegatble broth and cokk until just before tender, Cut into med chuncks Zuccini and tomato and add to pot. When pumpkin is cooked carefully scoop out pumpkin and puree or mash pumpkin to mush. Add Arrowroot or flour to pot and cook until liquid starts to thicken. Add pumpkin, heat to boil.
