I think the tahini holds the hummus together, I'm not quite sure. But I think the hummus will keep for a week or so if unopened in the fridge. The two have quite different tastes, try them and see! My favorite hummus recipe; One 15 ½ oz. can S & W brand garbanzo beans, drained 3 Tbsp. Joyva brand tahini 3 Tbsp. fresh lemon juice 2-3 gloves garlic, peeled and pressed before adding salt to taste In the bowl of a food processor combine all the ingredients and process until smooth. Refrigerate. People differ in taste, some like lots of garlic, others a little. Some folks like to add a dash of cayenne. In my experience the brands of garbanzo beans and of tahini matter. Tahini is used as a flavoring more than anything else. Between us, I far prefer hummus made without tahini. Fresh garlic, lemon juice, paprika and cayenne add plenty of flavor, and a good, rich extra-virgin olive oil adds a lovely texture (and even more flavor). To me, if you add even an iota of too much tahini it makes the hummus nearly inedible. Sarah M. The quickest way is to throw cooked chickpeas in the blender and add Italian salad dressing!
